{Spooky} Bite-Sized Dark Chocolate and Caramel Dipped Apples

It’s so hard not to get sucked into all of the amazing treats that this Halloween season has to offer.  But there is a way that you can still indulge without all of the guilt.  Bite-sized desserts and candies are the easiest way to enjoy what you love, by cutting the portion down by over half.  And truthfully, as good as a huge apple dripping with caramel tends to be, I am always satisfied after one or two bites.  Add in how easy these mini-caramel apples are to make and these will be a hit with your kids, at school functions and as a hostess gift for the next costume party you attend.

The key is using a melon ball scooper.  I tried this the first time with a mini ice cream scoop because I had one on-hand, but the results were definitely not what I was looking for.  The apple kept breaking and it came out too large, and flat all over.  So, I ran to the grocery store to grab the melon baller that I thought was hiding in the back of my kitchen supply drawer.  And it made all the difference.  I was able to make 20 bite-sized pieces with only two large organic Honeycrisp apples.  Which leads me to the other key: make sure to use great quality, organic apples, with no bruises, and make sure they are washed and dried well before beginning.

Make as many pretty little apple rounds as desired, one scoop at a time.  Place the mini apples on a wax-paper covered baking sheet.  Insert lollipop sticks into the center of the balls.  I cut standard lollipop sticks in half here.

Holding the lollipop stick, swirl the apple in melted dark chocolate until all of the fruit is covered.  I melted the chocolate in a double broiler on the stove-top.  Place the chocolate covered apples on the wax-covered baking sheet and place in the fridge for at least 20 minutes.

Remove from the fridge and dip the coated apples in caramel sauce.  I used store-bought Kraft caramels and melted them with heavy whipping cream in a saucepan over medium heat.  Roll edges in sprinkles, chopped nuts or other toppings immediately, then place back in the fridge to set.

Serve just after setting or store them in a covered or air-tight container in the fridge for a few days.

Live, Love, Granola: {Monkey Mix}

I love granola to munch on in the mornings or add to my yogurt, but I’m always picking out one or two things I don’t like, fishing at the bottom for the chocolate pieces or the biggest clusters of oats.  So, I was happy when I found this granola over the weekend, at our local farmer’s market, while trying my hardest to steer away from the tempting and ridiculously delicious crumb cake at another stand.  I was looking for something a little less sugar-filled and easy to eat on-the-go.  And something that my kids would like just as much, since you can never have too many healthy snack options on-hand while carting around a toddler.   After sampling a handful of great varieties, I walked away with the Monkey Mix: no nuts included, which is the best option when sharing with little ones, just oats, honey, cinnamon, dried banana chips, and big dark chocolate chips.  A perfect blend that I would enjoy consistently all the way through.  If you are local, you can snag your own at the Roseland Farmer’s Market on Fridays until November from 12pm – 6pm.  The Market is located at the corners of Roseland and Harrison Avenues in the park adjacent to the Roseland Public Library.  Or you can find them online HERE!

Must Be Fall

The boots are out and will be until March.  First tell-tale sign that it must be fall around here.  I love this pair of tall riding boots from American Eagle.  The color is that perfect shade of brown that goes with everything, suede is all over this autumn, and the length is great, coming right below the knee.  Easy to wear with skirts, fall dresses, jeans and a sweater.
