In The Kitchen: Spicy Sausage, Spinach and Mushroom Gnocchi

I love any dish that includes mushrooms and spinach is one of my favorite greens, so when I came across a recipe that combined both and had crumbled spicy sausage on top of that, which my husband looks for on every menu when we head out for dinner, and it listed the prep, plus cook time at only 15 minutes, I’m pretty sure I ran out to the store the very next day.  Throw in a filling, decadent pasta, like gnocchi, and this made for one hearty meal.  I have doubled the recipe and cooked this for family and stuck to the original serving size of two for just my husband and I.  I have served this up three times since stumbling upon it on Pinterest and it’s so simple and delicious that I will keep coming back to it for a long time.  If you are looking for an easy weeknight meal that requires only a few ingredients, then this is for you.

  • 1 16-ounce package of potato gnocchi (you can substitute any other type of pasta if you prefer or if you just want to change it up)
  • ¾ pound spicy pork sausage
  • 1 diced onion, about ¾ cup
  • 8 ounces of baby portobello mushrooms, sliced
  • 10 ounces of chopped, frozen spinach, cooked and drained well
  • Kosher salt
  • Ground black pepper
  • Freshly grated parmesan cheese, to top


  1. Bring a pot of water to a boil and follow the instructions on the gnocchi package. Drain well once done and set aside.
  2. Brown sausage in a skillet over medium high heat and break it into smaller pieces with a wooden spoon.  Add the onion and mushrooms to the skillet and saute until softened, for about 5 minutes.
  3. Toss the cooked and drained spinach into the sausage mixture.  (follow cooking instructions of the back of the frozen spinach package)
  4. Add the cooked and drained gnocchi to the skillet and gently toss to evenly distribute the ingredients.  Season with salt and pepper to taste.
  5. Serve hot and top with freshly grated parmesan cheese.
